Almond-Mandarin Salad

Serves 4

  • 1/2 head lettuce (chopped)
  • 1 cup chopped celery
  • 2 green onions (chopped)
  • 1 can mandarin oranges
  • 1/2 tsp. salt
  • 2 tbsp. sugar
  • 1 dash pepper
  • 1/2 cup vegetable oil
  • 2 tbsp. white vinegar
  • 1/4 cup sliced almonds (tossed with 2 tablespoons of sugar)

Toss the lettuce, celery, green onions and mandarin oranges together.

Mix the dressing: salt, sugar, pepper, oil and vinegar.

Gently cook the almond and sugar mixture over low head until the almonds are well-coated with the sugar.

Toss the dressing, almonds and lettuce mixture just before serving
