- 6-8 oz. angel hair pasta (or other thin noodles of your choice)
- 1 1/2 cups shredded cabbage/carrot mix
- 1/2 cup red pepper, thinly sliced
- 1/2 cup green pepper, thinly sliced
- 1 cup mung bean sprouts
- 1/4 cup fresh cilantro, minced
- 1/4 cup peanuts, chopped
- 1 cup peanut sauce or dressing of choice
Try serving Asian-Inspired Noodle Salad with these other recipes:
Cook noodles according to package directions (a bit of oil in the boiling water will keep them from sticking). Run cold water over the cooked noodles to chill slightly. Portion noodles into four plates/wide bowls. Layer cabbage/carrot mix, pepper slices, and bean sprouts over the noodles. Garnish with cilantro, chopped peanuts, and peanut sauce/dressing. Lots of fun to serve with chopsticks!
Note: the ingredient proportions are complete guesses. I simply have all these ingredients on hand and make according to what "looks right."
