*** This recipe is online at http://orthodoxkitchen.com/recipes/borscht-stew/ *** ================== Borscht Stew ================== Serves 6-8 Ingredients ----------- 2 lbs. beef stew meat (cut into bite size chunks) 4 carrots (sliced) 1 cup celery (optional) 1 onion (chopped) 2-3 potatoes (cut into bite size chunks) 3-4 beets (peeled and cut into small pieces) 5 cups water or broth 6 oz. tomato paste 1 tbsp. salt 1/4 tsp. pepper 1 tbsp. sugar 1 tbsp. vinegar 1/2 cabbage (thinly sliced) 1 bay leaf 1 tbsp. oil fresh dill, for garnish (chopped) sour cream, for garnish Instructions ------------ Heat oil in a large pot. Brown meat then add vegetables and saute for 5-10 minutes. Add water or broth, tomato paste, salt, pepper, sugar, vinegar, and bay leaf. Simmer for about 1 1/2 hours until meat is tender. Serve with fresh chopped dill and a dollop of sour cream.
