Borscht Stew

Serves 6-8

  • 2 lbs. beef stew meat (cut into bite size chunks)
  • 4 carrots (sliced)
  • 1 cup celery (optional)
  • 1 onion (chopped)
  • 2-3 potatoes (cut into bite size chunks)
  • 3-4 beets (peeled and cut into small pieces)
  • 5 cups water or broth
  • 6 oz. tomato paste
  • 1 tbsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. sugar
  • 1 tbsp. vinegar
  • 1/2 cabbage (thinly sliced)
  • 1 bay leaf
  • 1 tbsp. oil
  • fresh dill, for garnish (chopped)
  • sour cream, for garnish

Heat oil in a large pot. Brown meat then add vegetables and saute for 5-10 minutes. Add water or broth, tomato paste, salt, pepper, sugar, vinegar, and bay leaf. Simmer for about 1 1/2 hours until meat is tender. Serve with fresh chopped dill and a dollop of sour cream.
