- 2 lbs. beef stew meat (cut into bite size chunks)
- 4 carrots (sliced)
- 1 cup celery (optional)
- 1 onion (chopped)
- 2-3 potatoes (cut into bite size chunks)
- 3-4 beets (peeled and cut into small pieces)
- 5 cups water or broth
- 6 oz. tomato paste
- 1 tbsp. salt
- 1/4 tsp. pepper
- 1 tbsp. sugar
- 1 tbsp. vinegar
- 1/2 cabbage (thinly sliced)
- 1 bay leaf
- 1 tbsp. oil
- fresh dill, for garnish (chopped)
- sour cream, for garnish
Heat oil in a large pot. Brown meat then add vegetables and saute for 5-10 minutes. Add water or broth, tomato paste, salt, pepper, sugar, vinegar, and bay leaf. Simmer for about 1 1/2 hours until meat is tender. Serve with fresh chopped dill and a dollop of sour cream.
