- 1 1/2 lbs. cod fillet
- bread crumbs, as needed (about 2 cups)
- 4 tbsp. olive oil
- 1 medium onion (chopped)
- 2 stalks celery (chopped)
- 3 medium cloves of garlic (minced)
- 1-2 tbsp. lemon juice
- 1 tsp. salt
Preheat oven to 350 degrees. Wash fish and pat dry. Place on an oiled baking pan close together.
Heat oil in a saucepan. Add onion, celery and garlic. Saute until onion is soft but not browned. Remove from heat and add salt and lemon juice. Add enough of the bread crumbs to absorb the oil, but don't make it too dry.
Cover the fish with the bread crumb mixture and bake at 350 until the topping is slightly browned.
This is also good with butter instead of olive oil on non-fasting days.
