Chinese Sardine Stir-fry

Serves 4-6

  • 1 onion, chopped
  • 2 green bell peppers, diced
  • 3/4 cup rice, cooked
  • 1 tsp. freshly grated ginger
  • 3 cloves of garlic, minced
  • 1 tbsp. soy sauce
  • 1 tbsp. rice wine vinegar
  • 1 tsp. sesame oil
  • 2 tins sardines
  • 1/4 cup water
  • coconut oil, as needed

Easy summer stir-fry:
******
1. Saute the onions in oil until soft. Add garlic and saute 30 seconds more.
2. Add the green pepper and the water, cook until peppers get done to the desired level, adding a little more water if necessary.
3. Add the rest of the ingredients, frying the rice until it gets just a little bit of crispness to it. Taste and add soy sauce if necessary to taste.
