Chocolate Frosting

Makes 1 cups

  • 1/2 cup Vegan Margarine (Earth Balance or Smart Balance are favorites. Don't use light.)
  • 1/2 cup Unsweetened Cocoa Powder
  • 2 2/3 cups Confectioner's Sugar
  • 1/4 cup water or soy/rice milk
  • 1 tsp. Vanilla Extract

Beat margarine on medium speed in large mixer bowl until softened, about 1 minute. Add remaining ingredients. Beat on low speed until moistened, then medium speed until creamy.
