- 1 box Mori Nu Tofu Silken extra firm (Mori Nu silken is 'best' tofu for this recipe - box is about the size of a juice box. Firm or soft can be used for pudding consistency.)
- 8 oz Cool Whip
- 2 cups semi sweet chocolate chips
- 1 9" graham cracker crumb crust (Optional)
Cream the Tofu until smooth in either blender or food processor
Add Cool whip and mix until smooth
Melt chocolate chips (I use microwave)
Quickly add melted chocolate to the tofu mixture and mix until well blended. If you don't do this 'quickly' then the chocolate starts to cool and you will have little bits of chocolate in the pie - it won't be as smooth and creamy.
Fills a 9" graham cracker crumb crust
Or just put into a bowl and serve as a pudding
If children are 'picky' eaters, don't tell them it has tofu in it and they'll never know.
