- 4 eggs
- 2/3 cup sugar
- 1/4 tsp. salt
- 2 cups milk
- 1 tsp. vanilla
- 1 cup shredded coconut
- 1 pastry shell (uncooked)
Preheat oven to 350.
Mix all the ingredients in a bowl, except the coconut, and beat well. Make sure they are thoroughly blended. Pour mixture into the pie shell and sprinkle coconut on top.
Bake for about 35 min or until a thin knife inserted comes out clean.Cool before serving.
