- 1 lb. yellow split peas (rinsed)
- 8 cups water
- 1 1/2 tbsp. curry powder
- 1 tbsp. cumin
- 1 1/2 tsp. garlic powder
- 1 lb. sweet potatoes (peeled and diced)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 1 tsp. grated fresh ginger
- salt, to taste
Combine all the ingredients except for the salt in a large pot. Boil for 1 - 1.5 hours until the split peas are very soft and the soup is creamy. Add salt to taste.
