Dairy-free Brownies

Makes 24 brownies

  • 3/4 cup margarine
  • 2 cups turbinado sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup unsweetened applesauce
  • 2 tsp. vanilla
  • 2 cups dairy-free chocolate chips (12 oz.)

Preheat oven to 350 degrees. Cream margarine and sugar. Mix dry ingredients; add to sugar mixture alternately with applesauce. Mix in vanilla and 1 1/2 c. chocolate chips. Spread into greased 9" x 13" baking dish (see note below). Sprinkle remaining chips on top. Bake for 35-40 minutes or until knife comes out clean.

Note: even when the baking dish is well-greased, these tend to stick. Be sure to use a baking pan/glass dish that can stand up to a stiff metal spatula, since that's what you'll want for removal purposes.
