Date and nut cake

Makes 1 8" square

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 2/3 cups flour
  • 1/4 tsp. salt
  • 1 tsp. baking soda
  • 1/2 cup chopped nuts

In bowl, cover dates with boiling water and cool to lukewarm.
Cream sugar and shortening, add egg and vanilla and beatg well.
Add date mixture.
Sift dry ingredients and add to mixture, then add nuts.
Bake at 350 in greased, waxpaper lined pan.
Sprinkle with powdered sugar when cool.
