- 1 cup all-purpose flour
- 1 cup milk
- 6 eggs (beaten)
- 1/4 tsp. salt
- 2 tbsp. sugar
- 4 tbsp. butter
- lemon juice, to taste

Preheat the oven to 400 degrees. Melt the butter in a 12 inch cast iron pan. Mix the eggs, milk, flour and one tablespoon of sugar until thoroughly blended.
Pour the batter into the pan and bake for 20-25 minutes. When the pancake is done, it will pull away from the sides of the pan and will be slightly brown on top. It will also puff up.
Remove from the oven, sprinkle with lemon juice and the remaining sugar. Cut into wedges and serve immediately with pancake syrup.
