- 1 lb. ground beef
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 4-5 cups beef stock (or chicken stock)
- 1 28 oz can diced tomatoes (with liquid)
- 1 cup shredded cabbage
- 1 15 oz can kidney beans (drained and rinsed)
- 1 cup frozen corn (thawed)
- 2 cups sliced zucchini
- 2 fresh rosemary springs
- 1 tsp. dried oregano
- 1 tsp. dried basil
- salt, to taste
- pepper, to taste
- 1/2 cup uncooked pasta (smaller pieces such as macaroni)
Fry the beef, onion and garlic until cooked. Add the beef stock, tomatoes, cabbage, beans, corn, zucchini and seasonings. Bring to a boil.
Add the pasta, cover the pot and simmer for 15 minutes.
