- 1/2 cup butter
- 3/4 cup sugar
- 1 pinch salt
- 1 grated zest of lemon
- 4 eggs
- 2 tbsp. rum
- 1 cup flour
- 2 tbsp. cornstarch
- 1 tsp. baking powder
Batter
Beat butter and sugar together until fluffy. Stir in salt, lemon, eggs and rum. Gradually add flour, cornstarch and baking powder.
Grease 8" ring cake pan and pour in batter. Bake at 350 for about 45 min.
Filling
1 c. sugar 4 Tbsp rum
5 egg yolks 3/4 c soft butter
cookie crumbs
Boil sugar with 6 Tbsp water. Wisk egg yolks and pour syrup in ,stirring constantly. Stir in rum and beat until mixture is cooled.
Beat butter until fluffy and incorporate egg mixture a spoonful at a time.
Cut cake into 3 layers. Spread filling between layers and over the outside. Sprinkle top with cookie crumbs.
