Fruity Summer salad

Serves 4-6

  • 8-10 oz. fresh spinach (torn into bite size pieces)
  • 1 quart sliced strawberries
  • 3 green onions (chopped)
  • 3 large bananas (sliced)
  • 1/2 cup almonds (Slivered or sliced and toasted)
  • 1/2 cup oil
  • 1/4 cup onion
  • 2 1/2 tbsp. red wine vinegar
  • 2 1/2 tbsp. sugar
  • 1/2 tsp. ground mustard
  • 1/2 tsp. salt
  • 1 1/2 tsp. poppy seeds

Poppy seed dressing:
In blender, blend the oil, onion, vinegar, sugar, mustard and salt. Add poppy seeds and set aside.
Put the rest of the ingredients in salad bowl. Toss with dressing just before serving.
