Garbanzo Pasta Salad

Serves 4-6

  • 5 tbsp. Cider or wine vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1/4 cup oil
  • 3 cups cooked and drained pasta
  • 2 cups cooked garbanzo beans
  • 1/4 cup parsley and pimentos (chopped)

Mix vinegar, salt, oregano and oil in bowl. Add pasta,parsley and pimento. Toss to coat well. Cover and chill at least 2 hours. Season generously with pepper.
