Green Bean Salad

Serves 6-8

  • 6 cups sliced green beans (cooked, but still crisp)
  • 1 medium red onion
  • 1/2 cup diced red pepper
  • 1/2 cup diced celery
  • 1 tbsp. fresh oregano, minced
  • 1 tbsp. fresh dill weed, minced
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 clove garlic, pressed
  • 1/3 cup olive oil
  • 1/4 cup cider vinegar
  • 1/4 cup red wine
  • 1/4 cup sugar

Put vegetables in a large bowl. Place remaining ingredients in a jar, shake well, and pour over vegetables. Chill for at least two hours. This recipe is best made a day ahead.
