Ruth's

healthy breakfast or dessert

Serves 6

  • 2 bananas
  • other fruit, to taste (I have been using feijoas)
  • 1 lemon (whole)
  • 1 cup nuts and seeds (e.g. almonds, sunflower seeds, ground linseed)
  • fruit juice or water, enough to use blender
  • 1 packet gelatine dessert ("jelly", "jell-o"? The stuff you add two cups boiling water to? well, just add one cup, in a separate container and set aside)

Blend together fruit, lemon, nuts/seeds with fruit juice. This will make a slightly gritty texture.
Add warm jelly mixture. Blend again.

Pour into 6 small serving bowls and put in fridge.

The servings are small, but remarkably filling. The sourness of the lemon is cancelled by the sweetness of the jelly, but you get all that vitamin C from the skin and all.
