Honeydew & Lime Soup

Serves 6

  • 1 honeydew melon (5 lbs.) (chilled, cut into 1-in. chunks)
  • 1/4 cup fresh lime juice
  • 1/4 cup loosely packed fresh cilantro leaves
  • 1 tsp. jalapeno hot sauce
  • salt, to taste

Try serving Honeydew & Lime Soup with these other recipes:

In blender, pulse melon with lime juice, cilantro, hot sauce, and 1/8 tsp. salt until pureed. Transfer soup to large bowl or pitcher; cover and refrigerate 2 hours or until chilled. Stir before serving.

A refreshing addition to Dormition Fast meals--try with tuna sandwiches, taboule, hummus and pita, etc..
