Imperial Chicken Salad

Serves 6

  • 2 cups cooked chicken (cut in strips)
  • 4 med. potatoes (cooked peeled and sliced)
  • 3 hard boiled eggs (sliced)
  • 1/2 cup dill pickles (chopped)
  • 1/2 cup celery (chopped)
  • 1 tbsp. onion (grated)
  • 1 tbsp. capers (drained and rinsed)
  • 3/4 cup mayonnaise
  • 1 tbsp. lemon juice

In large bowl combine all ingredients except the mayo and lemon juice.
Blend the mayonnaise and lemon juice and stir into the salad. Chill.
