*** This recipe is online at http://orthodoxkitchen.com/recipes/irish-pots-de-creme/ *** ========================= Irish Pots De Creme ========================= Serves 6 Ingredients ----------- 6 egg yolks 1/4 cup sugar 1 3/4 cups whole milk 1/4 cup Irish Cream 1/2 tsp. vanilla 1/8 tsp. nutmeg 4 cups hot water Instructions ------------ Wisk egg and sugar together. Heat milk gently to a simmer. Remove from heat. Wisk a small amount of hot milk into the egg mixture, then wisk the egg mixture into the hot milk. Stir in the liqueur and vanilla. Pour into 6 4oz. custard cups, through a fine mesh sieve to remove any cooked egg. Sprinkle with nutmeg and place in a baking dish. Place dish in preheated oven(325), then pour hot water into baking dish until it comes halfway up on the cups. Bake for 35 min. Remove cups from the water and cool on racks. Refrigerate for at least 3 hours.
