- 1 lb. green beans, 1 inch pieces
- 2 tbsp. olive oil
- 1/2 onion, diced
- 1 tbsp. garlic
- 1/4 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 2 tbsp. fresh mint, finely chopped
- 1 1/2 cups diced tomatoes
- 1/2 cup water
- 2 tbsp. lemon juice
This can also be made by adding cubes of lamb or beef that have been browned with a sprinkling of allspice and nutmeg. If you do this, omit the mint. Serve the same way over rice.

(1) In a large sauce pot, saute onions in olive oil until translucent. Add garlic and saute another minute.
(2) Add remaining ingredients except for mint. Cook on medium until green beans are done. Add mint and cook a couple minutes more.
(3) To serve, spoon some cooked rice onto a plate and sprinkle liberally with ground cinnamon. Put the loobyeh and sauce over top. Great with freshly baked pita bread!
