Marinated Vegetable Salad

Serves 8

  • 1 1/3 cups canola oil
  • 2/3 cup red wine vinegar
  • 2 tsp honey
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 2 tsp salt
  • 1/2 tsp dry mustard
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 7 oz can black olives
  • 1 cup radishes (sliced)
  • 1 bunch broccoli (chopped)
  • 1 head cauliflower (chopped)
  • 1 10 oz package frozen green peas
  • 2 cups shredded mozzarella
  • 1 small bunch green onions (chopped)
  • 8 oz fresh mushrooms (sliced)

Mix the oil, vinegar, honey and spices in a large bowl and toss with the broccoli and cauliflower. Refrigerate overnight. Add the remaining ingredients, mixing well, at least four hours before serving.
