Mustard-Tarragon Potato Salad

Serves 4-6

  • 6 cups potatoes (boiled and cut into 1 inch pieces)
  • 3/4 cup plain soymilk
  • 3/4 cup dijon mustard
  • 2 tsp. dried tarragon
  • 1/2 tsp. salt (or to taste)
  • 4 tbsp. capers (optional)

Whisk together the soymilk, mustard, tarragon and salt, and toss with the potatoes and capers.
