- 6 cups potatoes (boiled and cut into 1 inch pieces)
- 3/4 cup plain soymilk
- 3/4 cup dijon mustard
- 2 tsp. dried tarragon
- 1/2 tsp. salt (or to taste)
- 4 tbsp. capers (optional)
Whisk together the soymilk, mustard, tarragon and salt, and toss with the potatoes and capers.
