- 2 14oz cans hominy (do not drain)
- 1 14oz can black eyed peas (do not drain)
- 2 cans crushed tomatoes (do not drain)
- 1 lb. frozen lima beans
- 1 lb. frozen corn
- 2 onions (large, chopped fine)
- 1 tbsp. garlic powder
- 2 tbsp. oregano
- 1 tbsp. chili powder (the mixture, not powdered chilis)
- 1 tsp. Tabasco sauce
- salt and pepper, to taste
Saute the onion and tabasco. Add wine and simmer until liquid is nearly gone. Add spices and saute until onion sticks to pan. Add tomatoes and deglaze pan. Add rest of ingredients, bring to boil, simmer until done. Serve with warm tortillas. To my taste, there is no need to add any salt, given that the canned ingredients already have plenty, although black pepper is always welcome.
