- 3 bunches parsley
- 1 lb. sugar (for each 2 cups of liquid)
- 1 lemon (peeled thinly and tie into a piece of cheese cloth)
Place parsley in pot, cover with water and bring to a boil. Biol for about 25 min. Strain through a jelly bag or cheese cloth.Return liquid to pot and simmer 10 min. more. Measure the liquid and add 1 lb. of sugar for each 2 cups of liquid. Boil together until jelly sets. Put the lemon in the boiling liquid during the last 10 min of cooking.
The jelly is set when it begins to hold together when dropped from a spoon.
