*** This recipe is online at http://orthodoxkitchen.com/recipes/piroshki/ *** ============== Piroshki ============== Makes 4 doz. Ingredients ----------- 1/2 cup warm milk 2 tsp. yeast 3 eggs 1 cup warm milk 1/2 lb. unsalted butter 4 1/2 cups flour 2 tbsp. oil 1 cup sugar 1 tsp. salt Instructions ------------ In large bowl, dissolve yeast in 1/2c warm milk. Add 1c of flour, mix thoroughly, cover and set aside to rise. Beat eggs with sugar until eggs become light; mix in oil, salt and the other cup of warm milk. Stir egg mixture into the risen yeast. Add flour a little at a time until dough is soft, but not sticky (flour amounts may vary depending on weather). Cover and let rise until double. Form piroshki either by rolling dough out to about 1/4" and cutting circles with a glass or pinching off pieces of dough, rolling them into a ball and flattening them. Put enough filling in the center so dough can be closed around it (like a finger roll). Place on greased pan with enough space to expand. Brush tops with egg yolk and water mixture. Bake at 350 for about 20 min. or fry in oil until browned.
