Poached Salmon

Serves 4-6

  • 1 1/2 lbs. salmon
  • 1 cup white wine
  • 2 quarts water
  • 2 tbsp. vinegar
  • 2 onions (chopped)
  • 2 carrots (chopped)
  • 1 celery stalk (chopped)
  • 4 parsley sprigs
  • 6 peppercorns
  • 1 cloves garlic (minced)
  • 2 whole cloves

In a skillet just big enough to hold the fish, bring wine and water to a boil. Add vinegar, vegetables,and spices simmer gently for about 1/2 hr. Add salmon and simmer( do not boil) allowing 12 min per pound. Remove skin and serve.
