Potato Latkes

Serves 6-8

  • 5 potatoes
  • 2 eggs
  • 6 scallions (chopped very fine)
  • 1 tsp. salt
  • pepper, to taste
  • 1 tbsp. parsley (chopped very fine)
  • 1 tsp. lemon juice
  • oil, for frying
  • 3 tbsp. flour

Peel and grate potatoes. Mix in eggs and scallions. Mix in flour and salt and pepper, then add lemon juice and parsley.
Heat frying pan with oil. Spread spoonfuls of mixture very thin in pan and fry until golden brown on both sides.
