   Date Pinwheel Cookies

Makes 2-4 dozen 

Ingredients
-----------
4 cups flour
3 eggs
1 lb. dates, chopped
1/2  cup sugar
1/2 cup water
1 cup sugar
1 cup brown sugar
1/2 cup butter
1/2 cup lard/shortening
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup finely chopped walnuts (optional)


Instructions
------------
(1) For the filling: Boil dates, 1/2 cup sugar, and 1/2 cup water.  Cool and add nuts, if
desired.
(2) Mix remaining ingredients and roll out dough into 2 large rectangles.  Spread filling
on top, then roll dough into logs. 
(3) Chill overnight.
(4) Slice and bake at 350 F for 10-15 minutes.
