- 9 cups sliced cumcumbers (or more)
- 3 cups sugar
- 1 cup sliced onion
- 1 cup sliced green pepper
- 3 tbsp. Kosher salt
- 2 cups white vinegar
- 1 1/2 tsp. tumeric
- 1 1/2 tsp. mustard seed or pickling spice
- 1 1/2 tsp. celery seed
Put sugar, vinegar and spices in a clean gallon jar, and mix thoroughly. The sugar may not all dissolve. Add cucumbers, onion and pepper, packing down into the liquid. The liquid should just cover the cucumbers. Place in refrigerator. As liquid in the jar increases, add more cucumber slices. This recipe should make a full gallon. The pickles should reach their full flavor in about two days, and keep for a long time in the refrigerator.
