- 4 Zucchini
- 4 Summer Squash
- 4 Onions
- 1 tsp. Salt
- 1 dash Black Pepper
- 1 tsp. Garlic Powder
- 2 tbsp. Margarine
- 1/4 cup Non Dairy Creamer/ Soy Milk (on non-fast days you may use milk or cream for a richer flavor)
- 1 tbsp. Flour (sifted)
Try serving Steamed Vegetable Medley with these other recipes:
Rinse zucchini and squash and chop into rounds. Place in a medium sized pot and begin to simmer over medium to low heat. Add salt, pepper, and garlic (to taste). Cook until tender.
Chop onions into small pieces and place in a sauce pan with margarine and about 1 tbsp. of water. Bring to a boil.
Continue to cook onions until they become translucent and add additional water and margarine as needed to prevent the onions from browning.
Once there is a thick sauce in the pan slowly add the non-dairy creamer. Then add the flour slowly, stirring constantly to prevent lumps. Continue to cook until sauce becomes thick and creamy.
Add onion sauce to the pot of squash and mix thoroughly. Serve hot.
This onion sauce also goes great over broccoli and cauliflower. Enjoy!!
