Sweet and Sour Tofu

Serves 8

  • 2 blocks of extra firm tofu
  • 2 cups vegetable broth
  • 1 green pepper (diced)
  • 1 can pineapple chunks (reserve the juice)
  • 1 cup rice vinegar
  • 1 cup sugar
  • 1 tsp. salt
  • 1/2 tsp. ground ginger
  • 4 tbsp. flour
  • 1 cup water
  • 4 tbsp. soy sauce
  • peanuts, as a topping (optional)

Wrap the 2 blocks of tofu in a dishtowel, and top with a heavy object (a cast iron skillet works well for this). Let the tofu sit for at least an hour.

Combine the broth, pineapple juice, pepper and pineapple chunks in a saucepan. Bring to a simmer, cook for 5 minutes, and then add the vinegar, sugar, salt and ginger. Simmer for 30 minutes.

Stir together the flour, water and soy sauce, and then add the mixture to the pan. Stir and simmer about five minutes, until thickened.

Preheat the oven to 450 degrees.

Cut the tofu into 1/2 inch cubes and toss with 1 1/2 cups of the sauce (remove any peppers and pineapple). Bake for about 15 minutes, turning once. Cook under the broiler until the tofu begins to brown, about five minutes, turning once.

Serve the tofu with white or brown rice. Spoon the sweet and sour sauce over the top, and sprinkle with peanuts, if desired.

If you'd like, use just one block of tofu, and toss it with 3/4 cup of the sauce before you bake it. Then freeze half of the remaining sauce to use on another occasion.
