Sweet Potato Casserole

Serves 6-8

  • 5 large sweet potatoes
  • 3/4-1 cup sugar
  • 1 stick butter
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. ginger
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 cup milk

Bake sweet potatoes at 375 degrees for about an hour, until tender. Peel and mash well. Add the balance of the ingredients, mix and transfer to a 9x13 baking dish. Sprinkle with topping.

Topping:
1/4 cup flour
1/4 stick butter, softened
1/2 cup brown sugar
1/2 cup pecans, chopped

Cream butter, sugar and flour. Mix will be crumbly. Add pecans. Sprinkle on top of casserole.

Bake at 350 degrees for 30 minutes.
