Sweet Potatoe and Apple Casserole

Serves 8-10

  • 6-8 sweet potatoes
  • 6-8 apples
  • 2 cups water
  • 4 tbsp. corn starch
  • 1 cup brown sugar
  • 3/4 tsp. salt
  • 1/4 lb. butter

Boil potatoes until tender. Peel and slice.
Peel and slice apples.
Arrange in layers in a 9x13 baking dish with potatoes as last layer.
In sauce pan mix water, cornstarch, sugar and salt and bring to a boil. Add butter and cook until thickened.
Pour sauce over the potatoes and apples. Cover and bake at 325 for 1 hour. Uncover and bake another 15 min.
