*** This recipe is online at http://orthodoxkitchen.com/recipes/texas-caviar/ *** ================== Texas Caviar ================== Serves 6-8 Ingredients ----------- 1 can black eyed peas 1 can shoe peg corn 4 bell peppers (one each: green, yellow, red and orange) 1 small red onion 1 cup celery 1/2 cup vegetable oil 1 cup sugar 1/2 tsp. pepper 3/4 cup cider vinegar 3 tsp. minced jalepeno pepper Instructions ------------ Combine the oil, sugar, pepper and cider vinegar in a saucepan. Bring to a boil. Let cool. Mix with the rest of the ingredients and let sit for at least 2 hours. Serve with tortilla chips.
