- 1 can black eyed peas
- 1 can shoe peg corn
- 4 bell peppers (one each: green, yellow, red and orange)
- 1 small red onion
- 1 cup celery
- 1/2 cup vegetable oil
- 1 cup sugar
- 1/2 tsp. pepper
- 3/4 cup cider vinegar
- 3 tsp. minced jalepeno pepper
Combine the oil, sugar, pepper and cider vinegar in a saucepan. Bring to a boil. Let cool. Mix with the rest of the ingredients and let sit for at least 2 hours.
Serve with tortilla chips.
