Texas Caviar

Serves 6-8

  • 1 can black eyed peas
  • 1 can shoe peg corn
  • 4 bell peppers (one each: green, yellow, red and orange)
  • 1 small red onion
  • 1 cup celery
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 tsp. pepper
  • 3/4 cup cider vinegar
  • 3 tsp. minced jalepeno pepper

Combine the oil, sugar, pepper and cider vinegar in a saucepan. Bring to a boil. Let cool. Mix with the rest of the ingredients and let sit for at least 2 hours.

Serve with tortilla chips.
