- 4 large potatoes (baked)
- 2 tbsp. milk
- 2 tbsp. margarine or butter
- 12 tsp. salt
- 1 dash pepper
- 1 1/2 cups cheddar cheese (shredded)
- 2 crisply cooked bacon slices (crumbled)
- 2 tbsp. sliced green onions
Slice the potatoes in half. Keeping the skins intact, scoop out the insides and put them in a mixing bowl. Set the skins aside. Mash what you've scooped out with milk, margarine or butter, salt and pepper. Beat until fluffy, then stir in 1 cup of cheese, the baacon and the green onion. Fill the potato skins with this mixture.
Place on an ungreased cookie sheet, and bake at 350 degrees for 20 minutes. Top with remaining cheese. Continue baking 10 minutes.
