Vegan Banana Bread

Serves 1

  • 1 2/3 cups All-Purpose Flour
  • 1 1/2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 2/3 tsp. Salt
  • 1/3 cup Vegetable Oil
  • 2/3 cup Sugar
  • 1/4 cup Water
  • 1 cup Ripened Bananas (mashed) (2 - 3 Bananas)
  • 1/2 cup chopped walnuts (Optional)
  • 1/2 cup Semi-Sweet Choc Chips (Optional)

Preheat oven to 350.

Mix flour, baking powder, soda and salt. Beat or whisk together oil, sugar and water. Add flour mixture to oil mixture and add the mashed bananas. Stir in nuts, etc. Pour into a greased 9x 5 inch loaf pan and bake for 45 minutes to an hour until done. Cool in pan for 15 minutes. Optionally, the batter makes nice muffins. Bake at 350 for 22 minutes in cupcake/muffin pans. If using choc chips, liners are recommended.
