Wood Fired Salmon

Serves 6

  • 1 1/2 tbsp. olive oil
  • 2 Cloves garlic thin sliced
  • salt, to taste
  • Fresh Ground Pepper, to taste
  • 1 Bunch Dill
  • 2 lbs. Salmon

This works best on a charcoal / wood grill, but can be done on a gas grill or oven set at 350 degrees.

Make aluminum foil boat by bending up the sides and ends of the foil(shiny side up). Pour 1/2 of the olive oil into bottom of boat and spread out over bottom. Spread the sliced garlic in the oil. Sprinke a small pinch of salt over the garlic.

Place the salmon on the garlic. Sprinkle salt and pepper over the top of the salmon and then layer the dill over the salmon. Drizzle the rest of the olive oil over the dill and salmon.

Place on the grill and cover for 15 to 20 minutes. Remove from heat and cover with another piece of foil for5 minutes. This will allow the natural moisture in the salmon to settle in the fish.
